Financier is a treat that is at the same time fancy but also very easy to make, with staple ingredients you probably have in your fridge. Substitute the raspberries for any other berry for variations of the same flavor!

Ingredients
½cupall-purpose flour60 g
1cupalmond flour100 g
1 ½cupsicing sugar180 g
6large egg whites180 g
14tablespoonunsalted buttermelted (200 g)
1tablespoonvanilla extract
¾cupraspberriesfresh or frozen (100 g)
Cooking sprayif using muffin tins
Icing sugarfor serving
Instructions
Preheat your oven to 350°F.
Quickly grease two mini muffin tins with cooking spray.
Mix the flours with the icing sugar, removing any lumps with the help of a spatula.
In a medium bowl, whip the egg whites until frothy.
Add the flour mix, butter and vanilla extract and mix until combined.
Transfer the mixture to a piping bag (it's easier this way) and pipe the batter into the tin, making sure to not overfill them.
Add the raspberries on top of the financiers, pressing down so they're covered by the batter.
Bake for 25-30 minutes or until golden on the sides.
Remove financiers from the molds while they're still warm and give them a good coat of icing sugar before serving if you wish.
